Day 01

BREAKFAST - Steel Cut Oats with Banana Flax Puree
Steel cut oats - $0.20

First day, first meal... this is exciting!  Andrea and I had planned on making Steel Cut Oats, but we didn't chat about the accouterments.  She scurried off with the blender and some ingredients to the bathroom.  We are early risers and its New Years Day, the blending was performed in the bathroom to keep the noise down & the neighbors happy.


I prefer steel cut to regular oat meal any day due to the chewy bite and nuttier flavor.  The Banana Flax Puree a l'Andrea was amazing!  When she brought it out I was a little hesitant due to the color, but once I tasted it I was an immediate fan.  No sugar and on budget!



LUNCH - Eggs Over Easy with Potato Cakes, Salad, & Orange Slices
2 eggs - $0.36
2 potato pancakes - $0.12
orange slices - $0.06
small salad (about 1 oz) - $0.09

Since we didn't eat them for breakfast and we were in a bit of a rush to get out the door, we decided to cook some up with a side salad, orange slices and some cute little potato pancakes. You are not going to believe it... all for 61 cents a person! We are off to a great day.




DINNER - Dijon Chicken with Brown Rice & Sauteed Spinach
1/2 Large Chicken Breast - $0.50(approx)
1/2cup Brown Rice - $0.09
2oz Spinach - $0.18
2oz Heavy Creme - $0.12
1.5tsp Dijon Mustard - $0.07
1/4 Red Onion - $0.05
TOTAL: $1.01


Dijon chicken is a favorite and we eat this meal once every month or so... it is very tasty!  The chicken is moist and the sauce is rich and creamy with a light whole grain mustard hint.  I know you might be thinking it would be spicy or twang-y, but whole grain mustard is mild and quite delicious.  Give it a try!  Sauteed spinach and brown rice... very standard.  I am going to buy a more expensive brand of rice next time, because the mushy factor was present.


We really have had an amazing day of food!  This is a challenge and I know it's the first day, but it feels quite possible.  When is comes to finding affordable food that is healthy, we seem to be doing alright.  The things that will more than likely going to be a real challenge are cooking, cleaning, and hunting for good deals.  For example, the whole chicken we found was very affordable at $0.79 a pound.  The bird we picked was 7.4lbs and we split just one breast between the two of us.  I'm confident this bird will be popping up in future posts, cause we are saving it for sure.
